I love this piece - wonderful harmonies, melodies which stick in your head...
The piano accompaniment falls under your hands easily, even for a non-jazz pianist. The SSA arrangement is satisfying, and a brief look at the SATB one seems like it is mainly adding TB to SSA rather than re-harmonising which means you could do it with a number of choir configurations(though occasionally the melody is given to TB so you'd need to check if you wanted to do this).
I don't think it would really work as a setting of the mass in a service - it is a fun and beautiful concert piece, but I'd be surprised if many people found the up-tempo numbers appropriate spiritually. (Unless, of course, they go to church for a 'concert'!)
Not really a bad point, just an indication of difficulty: I have started teaching it to our children's choir (6-14 year olds) and they coped easily with the main melodies, but are struggling with the timing and pitching of the supporting harmonies. I think they'll get it in the end, but it isn't totally easy.
